Cut the bittergourd length-wisse and take out the seeds using spoon.
Slice the bittergourd.
Scramble the eggs into a bowl.
Stir fry the bittergourd first as they take longer to cook.
Add in the eggs.
Stir fry until bittergourd is softer.
Ready to serve! Simple and healthy! :)

Marinate the chicken with dark soya sauce.
Prepare the seasongs - 50ml Chinese black vinegar, 70ml water, 1 tablespoon sugar and 2 pieces of ginger.
Add seasonings to chicken to cook.
Cover and simmer for 10 minutes on medium fire. Remove cover every 5 mins to stir.
Ready to serve! I like the taste of Chinese black vinegar!
